The filling
Instructions
- Preheat the oven to 375ºF.
- Blitz 1 cup of rolled oats in a food processor until powdered.
- Combine the flours, almond meal, oat powder, sucanat, baking powder, and salt in a bowl and whisk.
- Cut in the vegan butter and peanut butter until the mixture resembles coarse meal.
- Add the liquid sweeteners, vanilla extract, and flax eggs, and mix well.
- Press half of the mixture into a greased 13x9 inch pan.
- Spread the jelly over the peanut butter mixture, then crumble the remaining mixture on top.
- Bake for 30-35 minutes until the top is browned.
- Cool and cut into bars, then store in an airtight container.
