Instructions
- Preheat the oven to 325ºF and line an 8x8-inch baking pan with parchment paper, spraying lightly with oil.
- In a large bowl, mix the oats, oat bran, cinnamon, salt, and peanuts.
- In a medium bowl, whisk together the coconut oil, peanut butter, vanilla, brown rice syrup, and ¼ cup of the jam until well combined.
- Combine the wet mixture with the dry ingredients until evenly moistened.
- Press the mixture firmly into the prepared baking pan and spread the remaining 3 tablespoons of jam on top.
- Bake for about 30 minutes until lightly browned, then cool completely on a wire rack.
- Use the parchment overhang to lift the bars from the pan and cut into squares.
