Instructions
- Mix oats, peanut butter, chia seeds, and honey in a large bowl.
- Stir in ¼ cup of chocolate chips.
- Press the mixture into a greased 8x8 pan.
- Melt the remaining chocolate chips with coconut oil in 30-second increments until smooth.
- Pour melted chocolate over the bars and refrigerate for at least one hour before cutting.
