Ingredients

The base

  • 1 ½ cups raw cashews
  • ½ cup raw unsweetened coconut flakes
  • 6 tablespoons sesame seeds (mix of black and white)
  • 3 tablespoons flax seeds
  • 3 tablespoons hemp seeds
  • ¼ cup wheat bran or cooked quinoa
  • 1 teaspoon kosher salt
  • ¼ teaspoon cinnamon

The sweetener and flavoring

  • ½ cup pure maple syrup or honey
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

The chocolate coating

  • 8 ounces dark chocolate (melted)

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8 inch baking pan.
  2. Toast the cashews, coconut, sesame seeds, flaxseeds, and hemp seeds separately until golden brown.
  3. Set aside some toasted seeds for topping the bars later.
  4. Process the cashews, coconut, and remaining seeds with salt and wheat bran in a food processor until finely chopped.
  5. In a saucepan, bring maple syrup and coconut oil to a boil, then stir in vanilla and pour over the cashew mixture.
  6. Press the mixture into the prepared pan and top with reserved seeds, then bake until golden brown.
  7. Let the bars cool, cut them, and dip in melted chocolate.
  8. Freeze the dipped bars for 5 minutes to harden the chocolate.
