No Bake Chocolate Cashew Fig Bars
Ingredients
The base

dried un-sulphured figs

raw cashews

unsweetened coconut flakes

sea salt

vanilla extract
The topping

⅓ to ⅔
cup
dark chocolate or vegan dark chocolate chips

extra toppings (chocolate chips, coconut, sea salt, fig)
Instructions
- Line a square baking pan with parchment paper.
- Cut off the stems from the dried figs.
- In a food processor, blend cashews, coconut, salt, vanilla, and figs until the mixture is fine and can stick together.
- Press the mixture firmly into the lined baking dish.
- Melt the dark chocolate in a microwave or on the stovetop until smooth.
- Pour the melted chocolate over the pressed mixture and spread evenly.
- Sprinkle optional toppings on top of the chocolate.
- Chill in the freezer for 20 minutes or in the fridge for a few hours until firm.
- Slice into bars and store in an airtight container.
