Vanilla Fig Bars

blanched slivered almonds

unsweetened shredded coconut

dried figs, soaked in ½ cup water for 12 hours
Instructions
- Pulse the almonds in a food processor until they resemble gravel.
- Add the coconut, salt, and stevia, and pulse to combine.
- Incorporate the soaked figs and pulse until mixed.
- Press the mixture into an 8 x 8 inch baking dish.
- Refrigerate the mixture for one hour.
- Cut into 16 squares and serve.
