Instructions
- Blend figs in a food processor until chopped.
- Add lemon juice and vanilla to figs and process until smooth.
- In a large bowl, combine almond flour and salt.
- In a small bowl, mix agave, yacon syrup, grapeseed oil, and vanilla.
- Combine wet and dry ingredients, then refrigerate the dough for 1 hour.
- Divide the chilled dough into 4 parts.
- Roll out one part of the dough between parchment paper into a rectangle.
- Spread ¼ of the filling down one side of the rectangle.
- Fold the dough to create a bar and seal the edges.
- Repeat with the remaining dough and filling.
- Transfer bars to a baking sheet and bake at 350°F for 10-15 minutes.
- Allow to cool and cut into pieces.
