Fig Newtons

Ingredients

Filling

  • 1 cup dried figs
  • ½ cup lemon juice, freshly squeezed
  • 1 tablespoon vanilla extract

Cookie

  • cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • ½ cup agave nectar or honey
  • ¼ cup yacon syrup
  • ¼ cup grapeseed oil or palm shortening
  • 1 tablespoon vanilla extract

Instructions

  1. Blend figs in a food processor until chopped.
  2. Add lemon juice and vanilla to figs and process until smooth.
  3. In a large bowl, combine almond flour and salt.
  4. In a small bowl, mix agave, yacon syrup, grapeseed oil, and vanilla.
  5. Combine wet and dry ingredients, then refrigerate the dough for 1 hour.
  6. Divide the chilled dough into 4 parts.
  7. Roll out one part of the dough between parchment paper into a rectangle.
  8. Spread ¼ of the filling down one side of the rectangle.
  9. Fold the dough to create a bar and seal the edges.
  10. Repeat with the remaining dough and filling.
  11. Transfer bars to a baking sheet and bake at 350°F for 10-15 minutes.
  12. Allow to cool and cut into pieces.
