Ingredients

Cookie Dough

  • ¼ cup rolled oats
  • 1 cup raw almonds
  • 1 cup raw pecans
  • ¼ tsp sea salt
  • cups firmly packed pitted dates

Filling

  • 8 ounces dried black mission figs
  • 1 tsp orange zest
  • ¼ tsp ground cinnamon
  • 1 pinch sea salt
  • 8-10 whole pitted dates
  • 1-2 Tbsp coconut sugar (optional)

Instructions

  1. Preheat the oven to 350°F (176°C) and toast oats and nuts for 8-12 minutes until golden brown.
  2. In a food processor, blend the toasted oats, nuts, and sea salt into a fine meal.
  3. Process the pitted dates until they form a ball, then mix with the oat and nut mixture to form a loose dough.
  4. Flatten the dough on parchment paper and roll it into a ¼-inch thick sheet, then cut it into two strips.
  5. Soak the figs in hot water for 3 minutes, then blend with orange zest, cinnamon, salt, and enough reserved water to form a thick paste.
  6. Spread the fig filling onto the center of each dough strip and roll the dough over the filling.
  7. Cut the logs in half and freeze for at least 30 minutes to set.
  8. Slice into 1-inch pieces and enjoy.
