Homemade Oatmeal Fig Bars

Ingredients

Filling

  • cups chopped dried figs
  • ½ cup water
  • 2 tablespoons orange juice
  • 1 teaspoon pure vanilla extract

Crust & Topping

  • cup coconut oil, melted
  • ¼ cup pure maple syrup
  • ½ cup packed light or dark brown sugar
  • 1 large egg
  • 1⅔ cups old-fashioned whole rolled oats
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (177°C) and line an 8-inch or 9-inch square baking pan with parchment paper.
  2. For the filling, combine chopped dried figs, water, and orange juice in a saucepan over medium heat and cook until figs are soft.
  3. Remove from heat, stir in vanilla extract, cool for 5 minutes, then puree until smooth.
  4. For the crust and topping, whisk together melted coconut oil, maple syrup, brown sugar, and egg in a large bowl.
  5. Add oats, flour, baking powder, cinnamon, nutmeg, and salt, mixing until combined.
  6. Press about 1½ cups of the mixture into the bottom of the lined pan, spread the fig filling on top, then sprinkle the remaining mixture over it.
  7. Bake for 25-30 minutes until lightly browned, then cool completely before cutting into squares.
