Vanilla Toasted Coconut Bars

Ingredients

  • 2 cups shredded unsweetened coconut
  • ½ cup melted coconut cream concentrate
  • ½ cup soft pitted medjool dates
  • ¼ cup almond butter
  • ¼ cup water
  • 2 teaspoons vanilla extract
  • ¼ teaspoon sea salt
  • ⅛ to ¼ teaspoon vanilla stevia

Instructions

  1. Toast shredded coconut at 350°F until golden, stirring occasionally.
  2. In a food processor, blend coconut butter, dates, almond butter, water, vanilla, salt, and stevia until smooth.
  3. Combine the toasted coconut with the blended mixture and press into a lined square dish.
  4. Freeze for 30 minutes, then cut into bars and store in the fridge.
