No-Bake Chocolate Coconut Energy Bars

Instructions
- Pit the dates and ensure they are soft.
- Place dates, cashews, and vanilla in a food processor and blend for 2 to 3 minutes, scraping the sides as needed.
- Add cocoa powder and salt, blending until combined. If needed, add a teaspoon or two of water for a sticky dough.
- Incorporate the shredded coconut and blend again, adjusting the texture as desired.
- Line a 9×9-inch pan with parchment paper and spread the dough evenly in the pan.
- Press additional shredded coconut on top and round the edges with a spatula.
- Freeze for 30 minutes to an hour.
- Remove from the freezer, take out of the pan, and cut into bars.
