Instructions
- Line an 8x8 inch baking dish with parchment paper.
- In a medium mixing bowl, whisk together oats, coconut, seeds, cherries, salt, and optional chocolate.
- Add nut butter, maple syrup, and vanilla extract, then mix until combined.
- Spoon the mixture into the baking dish and press it down firmly.
- Freeze for at least 30 minutes, ideally an hour, before cutting into 16 bars.
- Store in the freezer or fridge.
