Ingredients

The base

  • 2 cups quick-cooking rolled oats
  • cup unsweetened shredded coconut
  • ¼ cup seeds (hemp, chia, and pepitas)
  • cup tart dried cherries
  • ½ tsp fine sea salt
  • 1 cup nut butter (peanut or almond)
  • ½ cup pure maple syrup or honey
  • 2 tsp pure vanilla extract

Optional add-ins

  • ¼ cup mini chocolate chips
  • 1 tbsp cacao nibs
  • 1 scoop collagen peptides

Instructions

  1. Line an 8x8 inch baking dish with parchment paper.
  2. In a medium mixing bowl, whisk together oats, coconut, seeds, cherries, salt, and optional chocolate.
  3. Add nut butter, maple syrup, and vanilla extract, then mix until combined.
  4. Spoon the mixture into the baking dish and press it down firmly.
  5. Freeze for at least 30 minutes, ideally an hour, before cutting into 16 bars.
  6. Store in the freezer or fridge.
