Easy No-Bake Homemade Energy Bars with Oats

Ingredients

  • 1 ½ cup chopped pitted dates
  • 1 cup almonds
  • ¾ cup quick-cook oats
  • ¾ cup peanut butter
  • 1 teaspoon ground cinnamon (optional)
  • ½ teaspoon salt (optional)
  • ½ cup chocolate chips (optional)

Instructions

  1. Line an 8-inch square baking pan with parchment paper.
  2. Add dates, almonds, oats, peanut butter, cinnamon, and salt to a food processor and process until the mixture sticks together.
  3. Add chocolate chips and pulse until evenly mixed.
  4. Transfer the mixture to the lined baking pan and press down firmly.
  5. Chill in the freezer for at least 2 hours.
  6. Remove from the freezer, transfer to a cutting board, and cut into 12 pieces.
