3-Ingredient Cashew Date Bars

Instructions
- Line an 8×8-inch pan with parchment paper.
- Place 1 cup of cashews in a food processor and pulse until ground into crumbs.
- Add the pitted Medjool dates and blend for 3 to 4 minutes until pureed.
- Add the remaining ½ cup of cashews and salt, then pulse until coarsely chopped.
- Form the dough into a ball and press it into the lined pan.
- Freeze for 20-30 minutes to set.
- Remove from the pan, slice into bars, and store in an airtight container.
