Ingredients

  • 30 pieces pitted Medjool dates
  • cups raw cashews, divided
  • teaspoon coarse salt

Instructions

  1. Line an 8×8-inch pan with parchment paper.
  2. Place 1 cup of cashews in a food processor and pulse until ground into crumbs.
  3. Add the pitted Medjool dates and blend for 3 to 4 minutes until pureed.
  4. Add the remaining ½ cup of cashews and salt, then pulse until coarsely chopped.
  5. Form the dough into a ball and press it into the lined pan.
  6. Freeze for 20-30 minutes to set.
  7. Remove from the pan, slice into bars, and store in an airtight container.
