Easy Sesame Date Bars

pitted medjool dates

roasted and salted pistachios

cashew halves and pieces

chickpea flour

tahini

grated orange peel

orange juice

teaspoon
ground cinnamon

teaspoon
ground ginger

Salt
to taste

tablespoons
toasted sesame seeds
Instructions
- Soak the dates in water for at least 5 minutes, then drain.
- Add the soaked dates and all other ingredients except sesame seeds to a food processor.
- Pulse the mixture until it sticks together but still has some larger pieces.
- Transfer the mixture to a parchment-lined baking dish and press it down to form a flat surface.
- Sprinkle toasted sesame seeds on top and press them into the mixture.
- Cover and freeze for at least 30 minutes.
- Remove from the dish and slice into 16 squares.
