Chicken and Rice Casserole

Ingredients

The sauce

  • 2 ½ cups chicken broth
  • 1 ½ cups milk
  • ¾ cup flour
  • 1 tablespoon seasoning mix

The casserole

  • 1 ½ cups uncooked brown rice
  • 2 tablespoons seasoning mix
  • 1 cup water
  • 1 lb boneless skinless chicken breasts

Instructions

  1. Make the sauce by combining chicken broth and ½ cup of milk in a saucepan and bringing it to a low boil.
  2. Whisk flour and seasonings into the remaining milk until smooth, then add this mixture to the saucepan and stir until thickened.
  3. Preheat the oven to 375°F and butter a 9-inch square baking dish.
  4. In a bowl, mix uncooked rice, the sauce from step 1, 1 tablespoon of seasoning, and water, then pour into the prepared dish.
  5. Place chicken pieces on top and sprinkle with the remaining seasoning.
  6. Cover with foil and bake for about 45 minutes, then remove the foil and bake for an additional 30-45 minutes until cooked through and slightly browned.
  7. Let cool for 15 minutes, shred the chicken, and mix with the rice before serving.
