Ingredients

The main ingredients

  • 4 pieces bone-in, skin-on chicken thighs
  • 1 cup long grain white rice (basmati or jasmine)
  • 4 cups chicken broth

The vegetables

  • 2 medium carrots, diced
  • 1 medium onion, diced
  • 1 cup mushrooms, sliced
  • 1 cup peas

The seasoning

  • 1 tablespoon homemade chicken seasoning
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat the oven.
  2. Sear the chicken thighs in a dutch oven until golden brown.
  3. Remove the chicken and sauté the diced onion, carrots, and mushrooms until softened.
  4. Stir in the rice and chicken broth, then return the chicken to the pot.
  5. Add the peas and Worcestershire sauce, mixing everything together.
  6. Cover and bake in the oven until the rice is cooked and the chicken is tender.
