Instructions
- Preheat oven to 350°F and grease an 8.5x11" casserole dish with avocado oil. Sauté the onion in avocado oil until soft. Combine chicken, rice, herbs, mushrooms, and onion in a bowl, then transfer to the baking dish. Blend sauce ingredients and simmer until thickened. Pour sauce over the base and stir to coat. Bake for 55 minutes until edges are golden. Let cool before serving.
