Instructions
- Preheat the oven and prepare a baking sheet.
- Arrange sliced carrots, green bell pepper, red onion, white beans, and cauliflower on the baking sheet.
- Drizzle olive oil and lemon juice over the vegetables.
- Sprinkle oregano, garlic powder, parsley, rosemary, black pepper, and sea salt over the veggies.
- Mix the vegetables and seasonings to distribute evenly.
- Roast in the oven for about 30 minutes, stirring halfway through.
- Remove from the oven and serve, optionally with whole grains or pasta.
