Mediterranean Sheet Pan Veggies

Ingredients

The vegetables and beans

  • 2 medium carrots, sliced
  • 1 small green bell pepper, sliced
  • 1 small red onion, sliced
  • 1 15-ounce can white beans, rinsed and drained
  • 1 small head cauliflower, separated into small florets

The dressing and seasonings

  • 1 ½ tablespoons extra virgin olive oil
  • ½ lemon juiced
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • 2 tablespoons fresh chopped parsley (or 1 teaspoon dried)
  • 1 tablespoon fresh chopped rosemary (or 1 teaspoon dried)
  • ¼ teaspoon black pepper
  • as desired optional sea salt

Instructions

  1. Preheat the oven and prepare a baking sheet.
  2. Arrange sliced carrots, green bell pepper, red onion, white beans, and cauliflower on the baking sheet.
  3. Drizzle olive oil and lemon juice over the vegetables.
  4. Sprinkle oregano, garlic powder, parsley, rosemary, black pepper, and sea salt over the veggies.
  5. Mix the vegetables and seasonings to distribute evenly.
  6. Roast in the oven for about 30 minutes, stirring halfway through.
  7. Remove from the oven and serve, optionally with whole grains or pasta.
