Ingredients

The vegetables

  • 2 medium bell peppers
  • 2 medium zucchini
  • 1 small sweet potato
  • 1 small red onion
  • 1 small head broccoli

The seasoning and oil

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

The finishing touch

  • 3 tablespoons grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F and prepare baking sheets with non-stick spray.
  2. Combine the vegetables in a large bowl and add olive oil, Dijon mustard, Italian seasoning, salt, garlic powder, and black pepper.
  3. Toss the vegetables to coat evenly and spread them in a single layer on the baking sheets.
  4. Roast the vegetables for 25 to 35 minutes, tossing and rotating halfway through.
  5. Sprinkle with Parmesan cheese before serving.
