Ingredients

Tahini Miso Sauce

  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon white balsamic vinegar
  • 2 teaspoons white mellow miso
  • 3-4 tablespoons very warm water
  • to taste kosher salt

Vegetables

  • 1 small sweet potato
  • 1 ear sweet corn
  • ½ head cauliflower
  • 1 small red bell pepper
  • 1 medium carrot
  • 1 small yellow straightneck squash
  • 1 small head broccoli
  • 2 tablespoons extra virgin olive oil or melted coconut oil
  • to taste kosher salt
  • 2 teaspoons za'atar spice blend
  • 1 tablespoon chopped cilantro
  • 3 cups cooked rice, quinoa, or small cooked pasta (such as orzo)

Instructions

  1. Preheat the oven to 425°F and prepare a baking pan.
  2. In a bowl, whisk together tahini, lemon juice, vinegar, and miso to create a paste.
  3. Add warm water gradually until the sauce is smooth.
  4. In a mixing bowl, toss chopped vegetables with olive oil and salt.
  5. Spread vegetables on the baking pan in a single layer and roast for 30-40 minutes.
  6. Sprinkle za'atar spice and cilantro over the roasted vegetables.
  7. Serve the vegetables over grains and drizzle with tahini miso sauce.
