Ingredients

The base

  • 1 loaf gluten-free bread, cut into 1-inch cubes
  • 2 cups mixed berries

The custard

  • 8 large eggs
  • 2 cups almond milk
  • ¼ cup maple syrup
  • 1 Tbsp pure vanilla or vanilla extract
  • ¼ tsp ground nutmeg
  • ¾ tsp ground cinnamon
  • ¼ tsp salt

Instructions

  1. 1. Coat a 9×13-inch baking dish with nonstick spray and arrange the bread cubes at the bottom.
  2. 2. Scatter the mixed berries over the bread cubes.
  3. 3. In a large bowl, whisk together eggs, almond milk, maple syrup, vanilla extract, nutmeg, cinnamon, and salt.
  4. 4. Pour the egg mixture over the bread and berries.
  5. 5. Cover the dish and refrigerate for at least 2 hours or overnight.
  6. 6. Preheat the oven to 350°F.
  7. 7. Bake uncovered for 50 to 55 minutes until golden brown and set in the center.
  8. 8. Serve warm.
