Ingredients

The sauce

  • ¼ cup soy sauce
  • 3 Tbsp. chili crisp
  • 2 Tbsp. unseasoned rice vinegar

The soup

  • 4 scallions scallions
  • 15 pieces dumpling wrappers
  • 2 Tbsp. toasted sesame oil
  • 1 lb. ground pork
  • 1 tsp. kosher salt
  • 1 piece ginger
  • 2 cloves garlic
  • 2 Tbsp. mirin
  • 4 cups low-sodium vegetable broth
  • ½ small head Napa cabbage

Instructions

  1. Combine soy sauce, chili crisp, and rice vinegar in a bowl and set aside.
  2. Slice the dark green parts of scallions for serving and the white parts for cooking. Cut dumpling wrappers into eighths.
  3. Heat sesame oil in a pot, add ground pork and salt, and cook until browned. Add ginger, garlic, and scallion whites, cooking until pork is done.
  4. Stir in mirin, then add vegetable broth and remaining soy sauce, bringing to a boil. Add dumpling wrappers and cook until tender.
  5. Add Napa cabbage and cook until just wilted. Remove from heat.
  6. Serve soup in bowls, drizzling with the reserved sauce and topping with scallion greens.
