Instructions
- Combine soy sauce, chili crisp, and rice vinegar in a bowl and set aside.
- Slice the dark green parts of scallions for serving and the white parts for cooking. Cut dumpling wrappers into eighths.
- Heat sesame oil in a pot, add ground pork and salt, and cook until browned. Add ginger, garlic, and scallion whites, cooking until pork is done.
- Stir in mirin, then add vegetable broth and remaining soy sauce, bringing to a boil. Add dumpling wrappers and cook until tender.
- Add Napa cabbage and cook until just wilted. Remove from heat.
- Serve soup in bowls, drizzling with the reserved sauce and topping with scallion greens.
