Ingredients

  • 3 cups blueberries
  • 1 lb strawberries, sliced or diced
  • 1 cup diced summer fruit (melon, kiwi, raspberries, etc.)
  • 1 Tablespoon maple syrup, raw sugar or raw honey
  • 1 Tablespoon lime juice
  • 2 teaspoons lime zest (if desired)
  • a pinch sea salt
  • 1 Tablespoon finely chopped mint leaves

Instructions

  1. Rinse and dry the strawberries and blueberries, then place them in a large bowl with the diced summer fruit and toss to combine.
  2. In a small bowl, whisk together the maple syrup, lime juice, optional lime zest, and a pinch of sea salt.
  3. Pour the dressing over the fruit and toss gently to combine, then sprinkle the mint on top and toss again.
  4. Refrigerate until ready to serve, best enjoyed right away or the next day.
