Instructions
- Heat 1 Tbsp of avocado oil in a skillet over medium heat and fry sweet potato rounds until crisp, about 10 minutes.
- Combine all sweet potato rounds in the skillet, pour salsa over, and stir to coat.
- Add carnitas or shredded chicken to the sweet potato mixture and heat through.
- In a bowl, mash avocados with lime juice and salt to taste.
- Fry eggs in a small skillet with remaining avocado oil until cooked through.
- Top the sweet potato-carnitas mixture with fried eggs and avocado mash.
- Garnish with jalapeños, cilantro, red onion, and almond flour as desired.
