Whole30 Chilaquiles with Sweet Potatoes

Ingredients

The base

  • 1 whole sweet potato
  • 2 Tbsp avocado oil
  • 1 tsp salt
  • 1 tsp pepper
  • ½ cup salsa
  • 1 cup carnitas or shredded Mexican chicken

The toppings

  • 2 whole avocados
  • ½ whole lime
  • 2 whole eggs
  • 1 whole fresh jalapeño
  • 1 bunch fresh cilantro
  • 1 whole red onion
  • 1 bunch green onions
  • 1 whole red radish
  • 1 Tbsp almond flour

Instructions

  1. Heat 1 Tbsp of avocado oil in a skillet over medium heat and fry sweet potato rounds until crisp, about 10 minutes.
  2. Combine all sweet potato rounds in the skillet, pour salsa over, and stir to coat.
  3. Add carnitas or shredded chicken to the sweet potato mixture and heat through.
  4. In a bowl, mash avocados with lime juice and salt to taste.
  5. Fry eggs in a small skillet with remaining avocado oil until cooked through.
  6. Top the sweet potato-carnitas mixture with fried eggs and avocado mash.
  7. Garnish with jalapeños, cilantro, red onion, and almond flour as desired.
