Ingredients

Guacamole

  • 2 large avocados
  • 1 tablespoon fresh lemon juice or fresh lime juice
  • 1 teaspoon salt

Loaded Sweet Potato Fries

  • 6 slices Whole30-compliant thick-cut bacon
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 1 teaspoon paprika
  • ¼ teaspoon cumin
  • 1 teaspoon cinnamon
  • 1 teaspoon chili powder
  • 2 medium sweet potatoes
  • 2 tablespoons coconut oil or ghee
  • 4 large eggs
  • 4 green onions sliced
  • ½ cup Whole30-compliant ranch dressing

Instructions

  1. In a small bowl, mash together the avocados and lemon juice, adding salt to taste, and set aside.
  2. Cook the bacon in a skillet until crisp, then transfer to a plate and reserve the grease.
  3. Mix the spices together in a small bowl.
  4. Melt coconut oil in a large skillet and cook the sweet potato fries until they begin to soften, then add the spice mixture and stir to coat.
  5. Cook until the sweet potatoes are tender, then transfer to a serving platter.
  6. In the same skillet, cook the eggs until the whites are set, then transfer to a plate.
  7. Top the sweet potato fries with the fried eggs, guacamole, bacon, green onions, and ranch dressing. Serve immediately.
