For the Chipotle Mayo

Instructions
- Heat 1 tablespoon of ghee in a skillet over medium heat and cook sweet potato slices with half the cinnamon and a pinch of salt for about 5 minutes.
- Flip the sweet potatoes, sprinkle with remaining cinnamon and salt, and cook for another 4-5 minutes until browned.
- In the same skillet, add the remaining ghee and cook the sausage patties for about 3-4 minutes per side until browned.
- Move the sweet potato slices and sausage to make room for the eggs, crack the eggs in the pan, and fry for about 2½ minutes per side, seasoning with salt.
- For the chipotle mayonnaise, combine all ingredients in a small bowl and mix well.
- To assemble the sandwiches, layer a sweet potato round, sausage, egg, and avocado or chipotle mayo, then top with another sweet potato round.
