Instructions
- Preheat grill to medium-high.
- Mix cake batter with egg and rum, then add nutmeg and ginger.
- Grill the pineapple slices until they have nice grill marks on both sides.
- In a grill-friendly saucepan, combine butter, ½ cup rum, and brown sugar. Heat until warm and bubbly.
- Layer grilled pineapple slices in the pie pans and place cherries in the middle of each slice.
- Pour the rum sauce over the pineapple and then pour the batter evenly into the pans.
- Create a direct/indirect environment for baking the cake.
- Bake for 12-15 minutes or until golden.
- Drizzle the rum glaze over the cakes while warm.
