Ingredients

Chipotle Crema

  • cup sour cream or plain yogurt
  • 1 teaspoon chipotles in adobo sauce
  • 2 teaspoons lime juice
  • ¼ teaspoon smoked paprika

Beer Battered Fish

  • 1 lb. fresh cod, cut into 2” strips
  • ¾ cup all-purpose flour
  • ¾ cup cornstarch
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 egg egg
  • cup Modello beer (or any beer)

Other

  • as needed corn tortillas
  • as needed creamy coleslaw for fish tacos
  • as needed toppings: jalapeno, fresh cilantro, crumbled queso fresco

Instructions

  1. Make the Chipotle Crema by mixing sour cream, chipotles in adobo sauce, lime juice, and smoked paprika in a small bowl.
  2. Prepare the batter station with one bowl for the dry ingredients (flour, cornstarch, garlic powder, smoked paprika, onion powder, salt, and pepper) and another for the egg and beer mixture.
  3. Coat the fish strips in the dry mixture, then dip in the beer mixture, and return to the dry mixture to ensure a crispy coating.
  4. Preheat the air fryer to 375°F, spray the basket with cooking spray, and place the coated fish in a single layer. Spray the fish with cooking spray and cook for 12-14 minutes, turning halfway through.
  5. Warm the corn tortillas in a skillet for 1-2 minutes per side.
  6. Assemble the tacos by adding coleslaw, beer battered fish, and chipotle crema to each tortilla. Garnish with optional toppings.
