Ingredients

The batter

  • 1 ¼ cup all-purpose flour
  • ¾ cup cornstarch
  • 2 teaspoons garlic powder
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 2 teaspoons baking powder
  • 1 ½ teaspoons salt
  • ½ teaspoon white pepper
  • 1 ½ cup beer

The fish

  • 1 ½ pound skinless cod fillet

For frying

  • enough for deep frying oil

Instructions

  1. Whisk together the flour, cornstarch, garlic powder, cayenne, paprika, baking powder, salt, and pepper in a large bowl.
  2. Reserve about ¾ cup of the flour mixture for dusting the fish.
  3. Pour oil into a skillet and preheat to 375°F.
  4. Add the beer to the flour mixture and whisk until smooth to create the batter.
  5. Dust each fish strip in the reserved flour mixture, then dip into the beer batter until fully coated.
  6. Carefully lower the battered fish into the hot oil and fry a few pieces at a time, moving them to prevent sticking.
  7. Fry until golden brown and crispy, about 3 to 4 minutes per side.
  8. Remove the fish with a slotted spoon and place on a wire rack to drain excess oil.
  9. Repeat the process with the remaining fish strips.
  10. Serve immediately with lemon wedges and tartar sauce.
