Beer Battered Fish

Instructions
- Whisk together the flour, cornstarch, garlic powder, cayenne, paprika, baking powder, salt, and pepper in a large bowl.
- Reserve about ¾ cup of the flour mixture for dusting the fish.
- Pour oil into a skillet and preheat to 375°F.
- Add the beer to the flour mixture and whisk until smooth to create the batter.
- Dust each fish strip in the reserved flour mixture, then dip into the beer batter until fully coated.
- Carefully lower the battered fish into the hot oil and fry a few pieces at a time, moving them to prevent sticking.
- Fry until golden brown and crispy, about 3 to 4 minutes per side.
- Remove the fish with a slotted spoon and place on a wire rack to drain excess oil.
- Repeat the process with the remaining fish strips.
- Serve immediately with lemon wedges and tartar sauce.
