Beer Battered Cod

Instructions
- Make the tartar sauce by whisking together mayonnaise, pickles, onion, lemon juice, and pickle juice. Season with salt and pepper and refrigerate.
- Preheat the oven to 200°F and prepare a plate with paper towels and a baking sheet with a wire rack.
- Heat vegetable oil in a Dutch oven until it reaches 375°F.
- In a bowl, whisk together flour, salt, cumin, black pepper, and cayenne. Mix in the beer until smooth.
- Dredge fish in the batter and carefully lower into the hot oil.
- Fry the fish in batches, cooking until golden brown and the internal temperature reaches 145°F, about 5 to 7 minutes.
- Remove the fried fish and drain on paper towels, then transfer to the oven to keep warm.
- Serve the fish with lemon wedges and tartar sauce.
