Ingredients

Tartar Sauce

  • ½ cup mayonnaise
  • cup dill pickles, minced
  • 3 tablespoons onion, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon dill pickle juice
  • to taste salt and freshly ground black pepper

Beer Battered Cod

  • 4 to 5 cups vegetable oil
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon ground cumin
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper
  • 1 cup light beer
  • 2 pounds cod, skinless, cut into strips
  • as needed lemon wedges, for garnish

Instructions

  1. Make the tartar sauce by whisking together mayonnaise, pickles, onion, lemon juice, and pickle juice. Season with salt and pepper and refrigerate.
  2. Preheat the oven to 200°F and prepare a plate with paper towels and a baking sheet with a wire rack.
  3. Heat vegetable oil in a Dutch oven until it reaches 375°F.
  4. In a bowl, whisk together flour, salt, cumin, black pepper, and cayenne. Mix in the beer until smooth.
  5. Dredge fish in the batter and carefully lower into the hot oil.
  6. Fry the fish in batches, cooking until golden brown and the internal temperature reaches 145°F, about 5 to 7 minutes.
  7. Remove the fried fish and drain on paper towels, then transfer to the oven to keep warm.
  8. Serve the fish with lemon wedges and tartar sauce.
