Ingredients

The batter

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons Old Bay seasoning
  • 12 oz beer
  • 1 large egg

The fish

  • 2 lb cod fillets
  • to taste ground black pepper

For frying

  • as needed cups oil
  • for serving lemon wedges

Instructions

  1. Mix all-purpose flour, salt, and Old Bay seasoning in a bowl.
  2. Whisk in the beer and egg until the batter is smooth, then let it sit for 10 minutes.
  3. Pat the cod fillets dry and season with salt and pepper.
  4. Heat oil in a pot to 375°F (190°C).
  5. Coat the cod fillets in the batter and drop them into the hot oil carefully.
  6. Fry the fish for 5 to 8 minutes until golden brown, turning halfway through.
  7. Remove the fish and drain on paper towels.
  8. Serve immediately with lemon wedges and a dipping sauce.
