Ingredients

The noodles and vegetables

  • 1 package soba noodles
  • 1 bunch asparagus spears
  • 1 small bunch spring onions or scallions
  • 12 ounces extra-firm organic tofu

The dressing

  • ¾ cup creamy peanut butter
  • ¼ cup brown rice vinegar
  • 2 cloves garlic
  • 1 drizzle toasted sesame oil
  • 1 big pinch crushed red pepper flakes
  • ¼-½ cup hot water
  • ½ cup peanuts

Instructions

  1. Boil the soba noodles according to package instructions, adding asparagus in the last minute of cooking.
  2. Drain the noodles and asparagus, then rinse under cold water to stop cooking.
  3. In a medium bowl, combine peanut butter, rice vinegar, garlic, sesame oil, red pepper flakes, and salt to make the dressing.
  4. Thin the dressing with hot water to achieve a yogurt-like consistency and adjust seasoning as needed.
  5. Toss the noodles, asparagus, spring onions, peanuts, and tofu with a splash of dressing, reserving some for garnish.
  6. Taste and adjust seasoning, adding more dressing if desired. Serve and enjoy!
