Instructions
- Boil the soba noodles according to package instructions, adding asparagus in the last minute of cooking.
- Drain the noodles and asparagus, then rinse under cold water to stop cooking.
- In a medium bowl, combine peanut butter, rice vinegar, garlic, sesame oil, red pepper flakes, and salt to make the dressing.
- Thin the dressing with hot water to achieve a yogurt-like consistency and adjust seasoning as needed.
- Toss the noodles, asparagus, spring onions, peanuts, and tofu with a splash of dressing, reserving some for garnish.
- Taste and adjust seasoning, adding more dressing if desired. Serve and enjoy!
