Ingredients

  • 7 cups vegetable broth
  • 2-3 pinches crushed red pepper flakes
  • 3 tablespoons extra virgin olive oil
  • 1 cup whole wheat, barley, or regular couscous
  • 1 ½ cups broccoli florets
  • 1 ½ cups cauliflower florets
  • 4 pieces oil-packed sun-dried tomatoes (optional)
  • 4 pieces green onions
  • 1-2 ounces goat cheese

Instructions

  1. Heat the vegetable broth, crushed red pepper flakes, and olive oil in a large pot until boiling.
  2. Remove the pot from heat and stir in the couscous.
  3. After two minutes, add the broccoli and cauliflower.
  4. Wait another two minutes for the vegetables to soften slightly.
  5. Ladle the soup into bowls and top with sun-dried tomatoes, green onions, and goat cheese.
