Ingredients

Filling

  • 5 cups sliced strawberries
  • 2 Tbsp arrowroot powder (or cornstarch)
  • 2 tsp vanilla
  • 1 Tbsp lemon juice
  • 2 Tbsp coconut sugar

Crumble

  • 1 cup rolled oats
  • 1 cup almond flour
  • cup coconut sugar
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • cup almond butter
  • cup melted coconut oil
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 350°F and prepare a skillet with nonstick spray.
  2. In a bowl, mix together the sliced strawberries, arrowroot powder, vanilla, lemon juice, and coconut sugar until the strawberries are coated.
  3. While the strawberries sit, prepare the crumble topping by mixing the oats, almond flour, coconut sugar, salt, and cinnamon.
  4. Add the almond butter, melted coconut oil, and vanilla to the crumble mixture, and mix until it sticks together when pinched.
  5. Pour the strawberries into the skillet and sprinkle the crumble topping over them.
  6. Bake for 35-40 minutes or until the crust is golden brown.
  7. Let it cool for at least 15 minutes before serving.
