Samoa Cookie Bars

Ingredients

Caramel

  • ½ cup almond butter
  • ¼ cup maple syrup
  • ¼ cup milk of choice
  • 1 Tbsp cornstarch
  • 1 tsp vanilla extract
  • tsp salt

Cookie Base

  • cup oat flour
  • ½ cup soy protein powder
  • ¼ cup tapioca flour
  • cup granulated sweetener of choice
  • ½ tsp baking powder
  • tsp salt
  • cup almond butter
  • ¼ cup yogurt of choice (dairy or non-dairy), vanilla
  • ¼ cup water
  • ½ tsp vanilla extract

Topping

  • ¾ cup unsweetened coconut, shredded
  • cup chocolate chips, melted

Instructions

  1. Preheat the oven to 350°F and line a 9”x5” loaf pan with aluminum foil or parchment paper.
  2. In a medium bowl, stir together all caramel ingredients and refrigerate to thicken.
  3. Combine dry ingredients for the cookie base in a separate bowl.
  4. Mix wet ingredients for the cookie base in another bowl, then combine with dry ingredients.
  5. Press the cookie dough into the prepared loaf pan.
  6. Spread coconut flakes on a baking tray and toast in the oven until slightly browned.
  7. Bake the cookie dough for 9-10 minutes.
  8. Pour the thickened caramel over the partially baked cookie base and return to the oven for 20-24 minutes.
  9. Sprinkle toasted coconut on top immediately after removing from the oven.
  10. Melt chocolate chips and drizzle over the coconut topping.
  11. Allow to cool completely, then remove from the pan and slice.
