Ingredients

The cookie dough base

  • ½ cup maple syrup
  • ½ cup coconut oil
  • 3 cups blanched almond flour
  • teaspoon salt
  • ¼ cup chocolate chips

The topping

  • cups caramel
  • 1 cup chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. Line a square pan with parchment paper and set aside.
  2. Melt the maple syrup and coconut oil until warm.
  3. Mix in the almond flour and salt until a thick dough forms, then fold in the chocolate chips.
  4. Transfer the dough to the lined pan and press into place, then refrigerate.
  5. Pour the caramel over the cookie dough base and refrigerate for about 30 minutes.
  6. Melt the remaining chocolate chips with coconut oil, pour over the caramel layer, and refrigerate until firm.
  7. Slice into bars and sprinkle with salt.
