Kale Salad with Parmesan and Pine Nuts

Instructions
- Rinse the kale leaves and pat dry, then trim the stalky veins and discard.
- Cut the leaves into very thin slices and place in a large mixing bowl.
- In a small bowl, combine the lemon juice, olive oil, vinegar, kosher salt, and pepper.
- Drizzle 2 tablespoons of the dressing over the kale and massage the leaves until they become glossy.
- Toss in the remaining dressing, Parmesan cheese, toasted pine nuts, and capers.
- Let the salad stand for 30 minutes to an hour before serving.
