Kale Salad with Parmesan and Pine Nuts

Ingredients

  • 8 cups lacinato kale, chopped
  • 4 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon champagne or white wine vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • ½ cup grated Parmesan cheese
  • cup toasted pine nuts
  • ¼ cup capers, drained

Instructions

  1. Rinse the kale leaves and pat dry, then trim the stalky veins and discard.
  2. Cut the leaves into very thin slices and place in a large mixing bowl.
  3. In a small bowl, combine the lemon juice, olive oil, vinegar, kosher salt, and pepper.
  4. Drizzle 2 tablespoons of the dressing over the kale and massage the leaves until they become glossy.
  5. Toss in the remaining dressing, Parmesan cheese, toasted pine nuts, and capers.
  6. Let the salad stand for 30 minutes to an hour before serving.
