Ingredients

The salad

  • 2 bunches Curly Kale
  • 1 cup Croutons
  • ½ cup Freshly Grated Parmesan Cheese

The dressing

  • ¼ cup Olive Oil
  • ¼ cup Lemon Juice
  • 3 cloves Garlic
  • 1 teaspoon Sea Salt
  • ½ teaspoon Black Pepper

Instructions

  1. Prepare the kale by removing the stems and washing the leaves.
  2. Massage the kale with sea salt for about 1-2 minutes until it softens.
  3. Chop or crush the croutons and add them to the bowl with the kale.
  4. Mix the dressing ingredients (olive oil, lemon juice, garlic, and black pepper) in a small bowl until combined.
  5. Pour the dressing over the salad and add the grated parmesan cheese, then toss to combine.
  6. Serve immediately or store leftovers in an airtight container in the fridge for up to 2-3 days.
