Ingredients

The dressing

  • cup olive oil
  • ¼ cup fresh lemon juice
  • tsp dijon mustard
  • 1 tsp honey
  • 1 pinch salt
  • ½ tsp freshly ground black pepper
  • 1 tsp minced garlic

The salad

  • 1 lb kale
  • 1 cup unsalted slivered almonds, toasted
  • ¾ cup freshly grated parmesan
  • cups grape tomatoes, halved
  • 1 cup croutons, slightly crushed

Instructions

  1. Whisk together the dressing ingredients in a mixing bowl and refrigerate.
  2. Remove kale leaves from the ribs, rinse, and dry them.
  3. Thinly slice the kale and transfer it to a large bowl.
  4. Add the almonds, parmesan, and tomatoes to the kale.
  5. Pour the dressing over the salad and toss to coat.
  6. Add croutons just before serving.
