Lemon Parmesan Kale Salad

The salad

Instructions
- Whisk together the dressing ingredients in a mixing bowl and refrigerate.
- Remove kale leaves from the ribs, rinse, and dry them.
- Thinly slice the kale and transfer it to a large bowl.
- Add the almonds, parmesan, and tomatoes to the kale.
- Pour the dressing over the salad and toss to coat.
- Add croutons just before serving.
