Ingredients

The salad

  • 2 medium cucumbers
  • 2 medium carrots
  • 4 ribs celery

The dressing

  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp maple syrup
  • ½ tsp sea salt
  • ¼ tsp garlic powder

For topping

  • to taste sesame seeds

Instructions

  1. Chop the cucumbers, carrots, and celery and place them in a bowl.
  2. In a small bowl or jar, whisk together the dressing ingredients.
  3. Pour the dressing over the salad and toss to coat.
  4. Cover and refrigerate for 20-30 minutes to allow the flavors to meld.
  5. Toss the salad again before serving and top with sesame seeds if desired.
