Easy Cabbage and Carrot Salad

Ingredients

The salad

  • 5 cups cabbage, thinly sliced (red or green)
  • 2 cups pre-cut matchstick carrots
  • 1 bunch green onions, sliced
  • 2 tablespoons toasted sesame seeds

The dressing

  • ¼ cup white vinegar
  • tablespoons dijon mustard
  • 2 tablespoons cane sugar
  • ½ tablespoon sesame oil
  • 3 tablespoons extra virgin olive oil
  • ¼ teaspoon salt
  • to taste fresh black pepper

Instructions

  1. Cut the cabbage in half and then into quarters, removing the core.
  2. Thinly slice the cabbage into strips.
  3. Cut the carrots into matchsticks if not pre-cut.
  4. In a large bowl, combine the sliced cabbage, matchstick carrots, sliced green onions, and toasted sesame seeds.
  5. In a small bowl, whisk together the vinegar, dijon mustard, sugar, sesame oil, extra virgin olive oil, salt, and pepper to make the dressing.
  6. Pour the dressing over the salad and mix well, massaging the dressing into the vegetables.
