Easy Cabbage and Carrot Salad

The dressing

Instructions
- Cut the cabbage in half and then into quarters, removing the core.
- Thinly slice the cabbage into strips.
- Cut the carrots into matchsticks if not pre-cut.
- In a large bowl, combine the sliced cabbage, matchstick carrots, sliced green onions, and toasted sesame seeds.
- In a small bowl, whisk together the vinegar, dijon mustard, sugar, sesame oil, extra virgin olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the salad and mix well, massaging the dressing into the vegetables.
