Ingredients

The slaw

  • 3 cups thinly sliced cabbage (purple or green)
  • ½ tsp sea salt
  • 1 cup grated carrot
  • 1 cup grated apple or Asian pear
  • 2 stalks green onion, thinly sliced

The dressing

  • 2 medium cloves garlic, pressed or grated
  • 1 inch piece fresh ginger, grated
  • 1 ½ Tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • ½ tsp maple syrup
  • 2-4 tsp gochujang or gochugaru (optional)

Instructions

  1. In a large bowl, combine sliced cabbage and salt, massaging for 2-3 minutes until it reduces slightly.
  2. Add grated carrot, grated apple or pear, and green onions to the cabbage and toss well.
  3. In a separate bowl, mix garlic, ginger, rice vinegar, sesame oil, maple syrup, and optional gochujang or gochugaru.
  4. Whisk the dressing and pour it over the slaw, tossing to combine.
  5. Taste and adjust seasoning as needed.
  6. Serve immediately or refrigerate for 1-2 days.
