Quick Cabbage Apple Slaw

The dressing

Instructions
- In a large bowl, combine sliced cabbage and salt, massaging for 2-3 minutes until it reduces slightly.
- Add grated carrot, grated apple or pear, and green onions to the cabbage and toss well.
- In a separate bowl, mix garlic, ginger, rice vinegar, sesame oil, maple syrup, and optional gochujang or gochugaru.
- Whisk the dressing and pour it over the slaw, tossing to combine.
- Taste and adjust seasoning as needed.
- Serve immediately or refrigerate for 1-2 days.
