Easy Apple Slaw

Ingredients

The slaw

  • 3 cups shredded cabbage or coleslaw mix with grated carrots
  • 1 large or 2 small apples, chopped or grated
  • 1 unit leek (white portion only) or 3 green onions

The dressing

  • 4 tablespoons plain Greek yogurt
  • 1 tablespoon mayonnaise (optional)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons red wine vinegar or white wine vinegar
  • ½ teaspoon dried mustard or 2 teaspoons Dijon mustard
  • to taste Kosher salt and ground black pepper

Optional toppings

  • 3 tablespoons slivered almonds
  • to taste chopped mint leaves

Instructions

  1. Add shredded cabbage to a large mixing bowl.
  2. Rinse and cut the leek or slice the green onion, then add to the bowl with the cabbage.
  3. Chop the apples and mix them into the bowl, then set aside.
  4. In a small bowl, whisk together yogurt, optional mayo, olive oil, vinegar, and mustard. Season with salt and pepper to taste.
  5. Pour the dressing over the slaw mixture and toss to combine.
  6. Let the slaw rest in a cool place or refrigerate for at least 30 minutes.
  7. If desired, top with slivered almonds and fresh mint before serving.
