Easy Apple Slaw

The slaw

shredded cabbage or coleslaw mix with grated carrots

large or 2 small
apples, chopped or grated

leek (white portion only) or 3 green onions
The dressing

plain Greek yogurt

mayonnaise (optional)

extra virgin olive oil

red wine vinegar or white wine vinegar

dried mustard or 2 teaspoons Dijon mustard

Optional toppings

Instructions
- Add shredded cabbage to a large mixing bowl.
- Rinse and cut the leek or slice the green onion, then add to the bowl with the cabbage.
- Chop the apples and mix them into the bowl, then set aside.
- In a small bowl, whisk together yogurt, optional mayo, olive oil, vinegar, and mustard. Season with salt and pepper to taste.
- Pour the dressing over the slaw mixture and toss to combine.
- Let the slaw rest in a cool place or refrigerate for at least 30 minutes.
- If desired, top with slivered almonds and fresh mint before serving.
