The dressing

Instructions
- Place the sliced apples in a large bowl and pour lemon juice over them, stirring to coat.
- Add the carrots, coleslaw mix, and scallions, and toss until mixed.
- In a smaller bowl, combine Greek yogurt, mayonnaise, apple cider vinegar, sugar, salt, and pepper, stirring until well combined.
- Pour the dressing over the coleslaw mixture and toss until lightly coated.
- Taste and adjust seasoning if necessary. Serve immediately or refrigerate until serving.
