Easy Apple Slaw

The dressing

Instructions
- Add the shredded cabbage to a large mixing bowl.
- Rinse and cut the leek or slice the green onions, and add them to the bowl.
- Chop the apple and mix it into the bowl with the cabbage.
- In a small bowl, whisk together the yogurt, optional mayo, olive oil, vinegar, and mustard, then season with salt and pepper.
- Pour the dressing over the slaw mixture and toss to combine.
- Let the slaw rest in a cool place or refrigerate for at least 30 minutes.
- Top with slivered almonds and fresh mint if desired, then serve cold.
