Easy Apple Slaw

Ingredients

The slaw

  • 3 cups shredded cabbage or coleslaw mix with grated carrots
  • 1 large or 2 small apple, chopped or grated
  • 1 piece leek (white portion only) or 3 green onions

The dressing

  • 4 tablespoons plain Greek yogurt
  • 1 tablespoon mayonnaise (optional)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons red wine vinegar or white wine vinegar
  • ½ teaspoon dried mustard or 2 teaspoons Dijon mustard
  • to taste kosher salt and ground black pepper

Optional toppings

  • 3 tablespoons slivered almonds
  • to taste chopped mint leaves

Instructions

  1. Add the shredded cabbage to a large mixing bowl.
  2. Rinse and cut the leek or slice the green onions, and add them to the bowl.
  3. Chop the apple and mix it into the bowl with the cabbage.
  4. In a small bowl, whisk together the yogurt, optional mayo, olive oil, vinegar, and mustard, then season with salt and pepper.
  5. Pour the dressing over the slaw mixture and toss to combine.
  6. Let the slaw rest in a cool place or refrigerate for at least 30 minutes.
  7. Top with slivered almonds and fresh mint if desired, then serve cold.
