Ingredients

The salad

  • 4 cups shredded green cabbage
  • 4 cups shredded red cabbage
  • 1 medium red bell pepper, stemmed, seeded, and very thinly sliced
  • 1 cup julienned carrots
  • ½ cup chopped fresh cilantro
  • ½ cup toasted sliced almonds or pepitas

The dressing

  • ¼ cup avocado oil
  • ¼ cup apple cider vinegar
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon maple syrup
  • 1 tablespoon toasted sesame oil
  • 1 clove garlic, grated
  • ¾ teaspoon sea salt

Instructions

  1. 1. Toss together the green cabbage, red cabbage, red pepper, carrots, and cilantro in a large bowl.
  2. 2. In a medium bowl, whisk together the avocado oil, apple cider vinegar, peanut butter, maple syrup, sesame oil, garlic, and sea salt to make the dressing.
  3. 3. Pour the dressing over the cabbage mixture and toss to coat.
  4. 4. Set the salad aside for 10 minutes to allow the cabbage to soften.
  5. 5. Season to taste and top with the toasted almonds or pepitas before serving.
