The dressing

Instructions
- 1. Toss together the green cabbage, red cabbage, red pepper, carrots, and cilantro in a large bowl.
- 2. In a medium bowl, whisk together the avocado oil, apple cider vinegar, peanut butter, maple syrup, sesame oil, garlic, and sea salt to make the dressing.
- 3. Pour the dressing over the cabbage mixture and toss to coat.
- 4. Set the salad aside for 10 minutes to allow the cabbage to soften.
- 5. Season to taste and top with the toasted almonds or pepitas before serving.
