Colorful Cabbage Salad

The salad

frozen shelled edamame

red cabbage, thinly sliced and roughly chopped

red bell pepper, cored and diced

orange bell pepper, cored and diced

fresh pineapple, diced

golden raisins

smoked almonds, roughly chopped

fresh mint, thinly sliced
The dressing

fresh lime juice

honey or agave nectar

chile-garlic sauce (optional)
Instructions
- 1. Boil or steam the edamame for about 10 minutes until cooked through, then drain and cool under cold water.
- 2. Whisk together the honey, lime juice, and optional chili-garlic sauce until well blended.
- 3. Prepare the vegetables and mix them in a large bowl, adding the cooled edamame.
- 4. Toss the salad with the lime dressing and add salt and pepper to taste.
