Ingredients

The salad

  • 8 oz Green cabbage (coarsely shredded, ~ 3 cups)
  • 8 oz Red cabbage (coarsely shredded, ~ 3 cups)
  • 1 medium Carrot (julienned)
  • cup Edamame (shelled and cooked, optional)
  • 1 medium Red bell pepper (diced finely)
  • cup Fresh cilantro (coarsely chopped)
  • cup Green onions (sliced)
  • cup Peanuts (chopped)

The dressing

  • 1 recipe Asian salad dressing

Instructions

  1. Combine the green cabbage, red cabbage, carrots, edamame, red bell pepper, fresh cilantro, and green onions in a large bowl and mix well.
  2. In a small bowl, whisk together the Asian salad dressing.
  3. Pour the dressing over the salad and toss to combine.
