Ingredients

The salad

  • ½ small red cabbage, shredded
  • ½ small green cabbage, shredded
  • 2 large carrots
  • ½ long English cucumber
  • 1 medium red onion, finely sliced
  • cup cilantro, finely chopped
  • cup mint, finely chopped
  • ¼ cup peanuts, chopped

The dressing

  • 2 tbsp olive oil
  • 2 tbsp tamari
  • 2 tbsp vegan fish sauce
  • 2 tbsp white wine vinegar
  • 3 cloves garlic, minced
  • Juice of 1 ½ limes
  • 1 ½ tsp salt
  • 1 tsp cracked black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp red chili flakes or ¼ Thai chili pepper, finely chopped

Instructions

  1. Prepare the cabbages, red onion, cilantro, and mint.
  2. Transfer the ingredients to a large bowl along with the chopped peanuts.
  3. Cut the carrot and cucumber into matchsticks and add to the large bowl.
  4. In a small bowl, whisk together the dressing ingredients.
  5. Dress the salad, mix well, and enjoy.
